Swords aren't an area Varian is very knowledgeable in (the fact he called a sabre a sword at all was probably a big clue there), but he spends a lot of time with Fern, who fills their home with the damn things, so Varian has gained vague interest by osmosis if nothing else. But it's what Manabu has to say about the sabre which really has his attention.
Naturally, he reaches out to touch it - in the awkward way of someone who blatantly is not used to handling blades, cooing a little.
